There really was only one way to describe the eels, and you nailed it. Slithering and slimy. I wish the HUGE eel would have been out... it was probably 5-6 feet long and slit open to reveal all of its meat. It was pretty amazing.

Well I've already eaten SOME eal in dishes, but not a whole one. It's a little different watching them slither around in the back reaches of a market.
